I'm going to be storing my TT in northern Florida, outdoors, covered, for a few months; maybe semi-permanently. Should I take any precautions against mice or other vermin? It will not be inspected for months. I know to remove all non canned food.

You will want to take some precations against mice and other critters. Some people use dryer sheets in the TT, but they don't always work.

I lived in central Fl for ten years....the humidity will be brutal...leave all cabinet doors open...a couple of windows a crack...any way to get a bit of air flow.
Also, put down some kind of pesticide around the tires...anything that touches the ground.
I wonder about the "covering". I would think it might enhance mildew formation on the outside of the RV.
I miss Fl.

I think you may want to reconsider the cover due to our extreme humidity. This would be an invitation to mold and mildew formation

Depending on how long you store the TT, we have not had a problem with mold and mildew as long as you take the usual storage precautions. Empty frig, leave it open, make sure sinks and tub are clean, leave water in the toilet with lid up not down. The humidity can be a problem, but we all know that TT are not air tight. The interior temps will get hot, but unless you have it stored under a cover, they will dissipate at night. You might want to be sure all outside holes are covered with plastic or tape. I would not leave windows cracked or vents as wind and rain can do damage.

I would have some concerns regarding the summer storms, hurricanes, we have in Florida. At home, here in Stuart, I have installed anchor eye bolts into my concrete pad and tie it down to them in an impending storm. So far it has ridden out 3 direct hits on Stuart. It would make me very nervous to just have one parked in a storage yard and me not being there to take care of it.

After reading this, I'm having second thoughts. I don't want to leave it in the harsh Florida sun without a cover. I lost my first trailer to a leak, so I am reluctant to leave it uncovered. A semi portable car port with a metal frame would be ideal, but a strong gust of wind could blow it on my trailer causing a lot of damage; both to my trailer and others. I'm going to be 12 hours away and won't be able to check on it. Here in Kentucky, I haven't had any mildew problems. But I don't have the cover on very tight; It kind of bellows in the wind. I do watch for cover wear on the roof, though.
