If you are looking for back roads try Hwy 61, but you will travel through small towns. I-55 is good until you hit the LA-MS state line, then it gets rough.

A nice road would be the Natchez Trace Parkway. Starts just west of Nashville so its probably out of the way for you but its a fine road at the posted 50MPH speed limit and lots of history along the way.I didn't see one stop sign or light all the way to Natchez Mississippi plus free campgrounds (3) enroute. Then Hwy 61 to New Orleans from Natchez through Baton rouge. Or Hwy 78 out of Memphis to Tupelo Miss. will take you to the Natchez trace Parkway at tupelo. Looks like Hwy one just takes you all over. Safe travels and enjoy whatever you do.

Avoid Hwy 61 in Baton Rouge, it is extremely congested at all times, except Sunday. Take Hwy 84 or Hwy 98 from Natchez to I-55.
