5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons cake flour (plain flour, not self-raising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips(optional)
a small splash of vanilla

1 coffee mug

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla essence
and mix again.

Put your mug in the microwave and cook for 3 minutes at
1000 watts. The cake will rise over the top of the mug, but
don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.

Is a standard sized mug okay, or is a mega mug better?

We have been expermenting with this for the last three or four nights. Either way you go this is very good!! We have found you can use self rising flour and the cake will over grow the mug by two or three inches and makes a more cake like desert...If you use plain flour, it might over grow the mug, but not by much and the consistency is much more dense like a gooy brownie...Our final creation is 2 tbls plain and 2 tbls self rising flour. We mix it up in a bowl and then devide it into three small coffee cups which riase just above the top. You can play a little with cooking time as well. These should be outlawed!!!!!! Makes it way to easy to have chocolate cake in 5 minutes!!

We also found that it was pretty dense, and not as sweet as we expected. We are assuming the semi-sweet chocolate chips and the cocoa made it more bittersweet than sweet. I am experimenting with making it a little sweeter, adding Hereshey's syrup to it helps a bit.

I am diabetic. Has anyone tried substituting Splenda for the sugar?

At the advice of a friend we tried the recipe with 2 TBS of oil and 2 TBS of unsweetened applesauce. We found it wasn't so coarse that way. I am going to try it with mini chocolate chips next.
It is a simple quick way to have some dessert.
