Cheesy Hot HashBrown Dish

Easy and filling and cheap!

1 pkg. frozen shredded potatoes (loose)(30oz)
1 stick softened butter
1 white or yellow onion, chopped fine
1 8oz cup sour cream
2 regular (10 oz) size cans cream of chicken soup
1 jalapeno, gutted, deribbed and chopped finely
1 8oz pkg (ziplock bag type) shredded cheddar or your favorite cheese

These amounts made enough for two 10 inch square foil pans full.

Thaw taters. Reserve a few ounces shredded cheese. Combine everything in big bowl and pour/scoop into "Pam'd" casserole or baking dish so it's about 2" deep and bake off at 350*F. Check at 50 minutes, should be evidence of minor bubbling on edges, you're done. Sprinkle remainder of cheese on top of hot taters and serve.

Options: put in scallions and crumbled bacon or crumbled sausage. Add/subtract hot pepper. One jalapeno leaves a very tolerable "finish".

Whoever gave me my copy of this recipe puts corn flake cereal on top for a crunchy topping. This is great for serving a crowd.

I have a similar recipe that I use fresh hashbrowns called "Simply Potatoes" I find these in the refrigerated section of my grocery store. No defrosting and the potatoes are not mushy, like frozen potatoes can be.

I like your idea of crumbled bacon, gonna have to try that. Cheese and bacon go together so well!

I've experimented with different types of cheeses and have made this dish using pepper jack cheese.

Another variation of this recipe is to add diced red and green bell pepper. It looks real festive when you serve it.

I usually bake a big ole ham for Christmas dinner and serve this potato dish with just cheddar cheese (no chillies). I really like the fact that I can prepare this dish a day or two before my dinner and then bake it just before dinner is served.

Hmmm, I wonder how this recipe would taste in a packet meal

I made this today for a pot luck dinner. I made one with jalapenos and one without. They both disappeared. I was lucky to get a spoonful. Thanks for the great recipe.

My wife made these again X 3 pans full for her shift (Bartender for football Sundays) and they were gone at 1:10pm. They are really, really good!
