Which do you prefer? I'm new at this toad stuff, but it seems that the coiled cords supplied with my tow bar are kind of a pain. Especially the umbilical cord as it seems like the tension is trying to unplug the cord from the sockets.

I prefer the coiled, they don't seem to sag as much, I also have a cord bar on my tow bar with a clip that helps with the sagging also.

One of the reasons that I chose the Roadmaster Sterling tow bar is because the cables run through channels on the tow bar. I really didn't want to have all of the curly-Q cables. The straight cables look neater.
However, the straight cables come out of the channel and then have to loop around to plug in or hookup. On two occasions, my wiring cable got caught between my drop hitch and the ground as I went over a dip in a driveway. The wiring cable was smashed and ripped and had to be replaced both times.
I now carry a curly-Q wiring cable as a backup in case it happens again.
Also, straight cables and wires have to be just the right length, otherwise they look worse than the coiled cables.

My tow bar came with curly cables and I usually win the fight to get them where I want them but not always. I am seriously considering switching to grade 5 chains.

I have straight wiring, and chains. I don't like cables. I have had too many frayed cables rip chunks of hide off me, even the plastic covered ones crack and fray eventually.
The towbar and all three trailers (boat, horse, flatbed), chains and straight wiring.
If the breakaway cables start cracking and/or fraying, they will be replaced by light chain also.
The cables on the winches will be replaced by the new synthetic rope, eventually.
I just don't like cable (wire rope, to some people).

Coiled cables don't cause me any problems. In fact, I use a loop of the cable to hold down the towbar levers when I'm unhooking. Here's some pics Jeep Hookup.

Paid a bundle for those coiled cables that came with my set up. And just 2,000 miles into the trip they are all ripped up and half the cables in them broke. And that's just from 2 slight scrapings getting into a gas station with a sloped driveway. It pinches them into the street and just shears the wire inside in half.
I'll be changing them out to chains also.
