I have this simmering now. It smells so good!
4 boneless loin chops or ~1 lb cubed lean pork
1 cup small red lentils
1 med onion, finely diced
4 ribs of celery, finely diced
2 cups water
2 Tbsp sodium free chicken bouillon granules
~1/2 jar green tomatillo salsa (and/or a can of chopped green chilis, or fresh)
1 tsp cumin
1 tsp coriander
plenty of fresh cracked black pepper
2 Tbsp onion powder
1 tsp garlic powder (I'd have used fresh chopped but I'm out)
2 Tbsp dried cilantro (I'd have used fresh, but the frost got it)
dash of chipotle tabasco
1/2 tsp liquid smoke

Dice and brown pork.
Add chopped onion and celery and add to meat to wilt.
Rinse lentils
combine all ingredients and simmer away.

This is South Beach Diet phase 1-friendly.

Leo, what a great sounding recipe especially for the cooler Fall weather. We're going to have to try it real soon. We've got lots and lots of Hatch Green Chilies from New Mexico to use up.

It was good. We ate almost all of it- just enough to freeze one cup for a future lunch.
My daughter thought it was spicy, but she can't tolerate any heat.
