Check your catalytic converter, or converters, blockage will creep up on you over the miles, and due just what your describing.

Mid '90's Cummins Rams had an occasional cold air snorkel collapse causing a loss of power due to air starvation. I removed mine on my '95 and '98 just in case. Good suggestion above.
We tow a 10,040 lb actual weight high profile 5th wheel with our 5.7L Hemi powered Ram. No lack of power around the southeast. My truck has a 3.73 final ratio. I prefer the 3.73 as it puts direct right around 2700rpm and 2nd at 4200rpm for the steeper ones. The Superduty with V-10 and 3.73 should make playtime towing less than 10k lbs.
O2 sensors will cause excessive fuel consumption and reduced power long before they set a code. If your intake and exhaust are clear and, you can usually tell by the sound under load, I would suspect the O2 sensors first.
Is it a lack of power or, are you a little apprehensive about putting your foot into it? There's a lot of cringe factor (fear of horsepower) misdiagnosed as engine weakness. I've never suffered from psychosomatic symptoms. The only cure for that is a groaning low rpm diesel.

Your problem could be a lot of things, but the first two
things that come to mind is to ck your fuel pressure while
driving, and secondly have your mass air flow sensor checked.
Your baro reading needs to fall into the spec for your elevation.
Note, thats baring any trouble codes in your pcm.
And oh yea, make sure your cat convertors not plugged!

OK, So here is the verdict from Ford, It is a bad cat converter. Caused by the bad coil the truck had,(This I had fixed a few weeks ago.) over time the bad coil caused the excess fuel to lead to the converter and in time killed it. The big deal is that the converter is about 1300 hundred bucks. So there you have it. Thanks to everyones thoughts! smprincipal

That cat must be made of gold! Sounds absurd to me.

Edit - I looked it up online

600 bucks! I'm sure someone would install for less than $700!

Gotta feed corporate America. Just be happy for the wealthy recipients at the top. Anxious to read about your towing experience after the fix....

Ford sells it with pipes and all.
As others noted: A good local muffler shop should be able to weld in a new one on for less than $700.00
I would also replace the O2 sensors if they are more than 4 years old.
With the V10 being a workhorse Ford set some very loose parameters on the ECM. The O2s have to just about quit or dead short to throw a code. The ECM needs to see about 300 misfire in one cycle before it will throw a code. Ford knew some owners were going to beat this motor.

Thanks for the information - we've benefited from it too. We have a V10, 6.8L gas, with 3.73 rear end and last time we towed we both noticed it was gutless up hill at high altitude. Last high altitude trip before that was over Monarch pass and it did just fine. After printing out this thread and passing it to DH to read, he went out and bought O2 sensors and new fuel filter. Sensors have never been replaced and we have a 99 F250. Fuel filter was replaced but awhile back, enough warranting replacement. In addition, since this rig mainly sits, he bought fuel additive to run through the system to clean injectors. What he's done so far would've cost over $1k at dealership with parts and labor. Injector cleaning alone would've been $85 (that's what it cost for our Jeep ZJ). Since DH has been doing all work on Jeep, he's doing it now on the F250. Saves money for trips and gas!

Diesels can have the same loss of power problem - take a look at Hannibals posting in this thread on 7/29/08.
