I use a stiff brush to get clean them. Sometimes I scrub so hard most of the peel comes off and I use them that way.

White potatoes are mealy because they are not dried adequately in the field anymore, which is why I have switched to red. Reds are firmer, fry up nice and brown, while not sticking to the pan like glue, and make fabulous garlic mashed potatoes with the skins left on! Try peeled, or not, and make up your own mind!

For reds, I say not. Extra nutrients, and they will add extra color to the salad.

JK, we do both ways, if I'm fixin 'em they have skin, if Gorgeous is fixin 'em they is nekkid.
