What am I missing here? So where are the other spot beams? I assume each one must have a different designation, other then 7S?

There are other "Spot Beam" satellites other than 7S. 101 has several transponders that are on spot beam antennas as well, but also contains several CONUS transponders for the Discoveries, History Channels, and Networks as well. A spot beam is each individual circle you see on these maps.

That's an old map for the 101 satellite that was generated by user input several years ago, and before the 119 satellite was put into use.
Both it, and the map shown here in this thread, are for the 101 satellite.
I thought there was one for the spot beams on the 119 satellite, but I can't find it.
