I've always left mine out. I've never had a problem. I usually run a lot of water through the tank to flush it, then I put the plastic plug back in. Guess it really doesn't hurt one way or the other.

My manual tells me to leave it out. However, I didn't want to leave that opening so I bought a plastic threaded plug at the hardware store that I put in every winter. I store the anode or plug in my basement so it doesn't rust. The anode still deteriorates over time and shoudl be replaced every three or so years.

I bought and use a plastic plug for the winter months. It keeps the threads clean and critters out.

My Suburban manual recommends to leave the plug in. And warns, if the anode rod will be coming in contact with any antifreeze, it will deteriorate rapidly. You'll need to flush the sentiment from the tank. Or buy a 3/4" pipe plug, and store the anode rod seperately.
Since I do drain the HWH, and put a small amount of A/F in the bottom of the tank, I do install the 3/4 plug.
