1 Package flour tortillas, torn into pieces
2 or more pounds of chicken, cooked, boned, diced
1 Small onion, diced
2c. Cheddar, mozzarella, and /or Monterrey jack cheese
Mix together:
1 can cream of chicken soup
1 can cream of mushroom soup
2/3 to 1 small can green chilies, chopped
1 cup salsa
½ c. sour cream
½ c. ripe pitted olives, sliced (optional)
½ c. sliced mushrooms, small can (optional)
In a 9x13 pan layer torn tortilla shells, chicken, onion and cheese. Pour over soup mixture and top with remaining cheeses.
Bake at 350 degrees for 30 minutes or until bubbly.
For Pot Lucks I mix everything together and cut up tortilla shells so they are 1 inch square, and stir in just before I put in slow cooker.
