Manatee Hammock (MANHAM, as we call it) is the place to go. My tip would be to go pretty quick as there are only a few shuttle launches left.

We went to one in early 2008. Spent the night at the Titusville Wally World; in the morning we went up to the north end of the Rt 406 bridge and parked the RV right at the water's edge. Great spot from which to watch the launch.

We went to one and we stayed at Jetty Park in Port Canaveral.. You get a great view right from the CG. And its right on the Ocean with a nice beach.
This is the view of the Shuttle Assembly Building from the edge of the campground. The lauch pad is just out of sight behind it about a mile of so further down the beach.

Unfortunately, the shuttle launch schedule is not cast in stone. The launch we were to see got scrubbed due to a malfunction and didn't get launched until after we left. But the tour of the Space Center was pretty neat. Pay the extra few bucks to get the extended tour. It gets you way closer to the launch pads.

I saw the last one. I was north bound on the turnpike to the Miami airport. It was kinda cool.
Being closer would probably be better.
Yep, actually drove to all of these places---in the last eight years. Missed Rhode Island and New Jersey.

I really wanted to go a couple years ago when one launched while we were at DisneyWorld, but couldn't get the rest of the family to go, so we watched it from Fort Wilderness. Still saw a good show, but nothing like being there.

And if you stay at jetty park you can watch the cruise ships go by as they head out on cruise. They are nearly as impressive as a launch due to their sheer size and how close they are to you as they pass.
Nothing beats a night launch though, well maybe standing in one of the launch bunkers when they lit off one of the minuteman rockets or when one of the saturn 5 rockets launched, but that was a long time ago.
